I absolutely love baking with fruit, which is why you’ll find many fruit desserts here on the blog.

This could quite possibly be one of my all-time faves! It’s tart from the lemon, but sweet from the raspberries. Oh, and that cookie crust on the bottom just makes it to-die-for!

These may feel more like something you’d like to eat for breakfast, but top one of these healthy strawberry bars with ice cream, and you’ve definitely fallen into dessert territory. Although, I will never turn down ice cream for breakfast.
3. Blackberry Crumble Bars
Okay, another easy fave of mine. I actually made these as a birthday treat for myself last year because they were just so dang good! Bonus that they’re also gluten free, and super easy to toss together last minute.
4. Strawberry Rhubarb Crumble
If we’re sticking to the crumble theme, then this strawberry rhubarb crumble is going to be a must-make for you. Rhubarb becomes soft and sweet when baked with a hefty amount of strawberries. Top this crumble with vanilla ice cream {see the trend?} and you’ve got yourself the perfect easy fruit dessert.

Speaking of rhubarb…these bars will have your mouth watering in no time. I’m not even kidding when I say that I ate the entire pan of these bars. The crust is made from a combo of walnuts and dates, giving a crunchy texture to compliment smooth cheesecake filling.

Is it a muffin, or is it a cupcake? With a hefty swirl of cream cheese frosting on top of these blueberry and peach studded babies, I’m calling them cupcakes. Call them whatever you’d like, but they’re a must make…especially with how delicious peaches are right now.
