So, I lied when I said it was finally spring. As I write this blog post it is snowing outside of my window. How can it be the middle of April and it’s still snowing? I know, I know…we live in Wisconsin, we should come to expect this ridiculous weather.

But I’m just not ready to {and never have}. So in-spite of the cold temps and white fluff that’s falling from the sky, I’ve decided to pretend it’s warm outside and enjoy a cool, sweet and creamy treat.

ICE CREAM!

Not your typical ice cream

Many of you may have already seen this banana ice cream phenomenon. Maybe I’m just behind the eight ball with this recipe, but I had a whole pile of frozen bananas in my freezer just waiting to be used up.

While using frozen bananas in smoothies is great, they’re even better as an ice cream! Blending them makes the bananas thick and smooth like traditional ice cream.

The best part is there’s no dairy in this recipe. For my lactose free friends, this is a great substitute for you when the ice cream craving strikes.

The other best part {can there be more than one best part?}? This recipe requires no churning, and only 3 simple ingredients: bananas, cashew milk and vanilla.

The only piece of equipment you need to make this sweet and healthy ice cream alternative is a food processor.

But…this recipe actually starts a day ahead. You know those bananas that have been hanging out on your counter that have now gone brown and you don’t want to spend the effort of making banana bread? This is the perfect recipe for them!

How to make banana ice cream

Slice the bananas and place in a freezer safe Ziploc. Then freeze the bananas for 5-6 hours, or overnight. If you freeze the bananas overnight, then just leave them on the counter for about 5 minutes to thaw a little. This will make blending easier.

Add the bananas to a food processor, along with the milk and vanilla. Blend and scrape until the bananas are all broken down and super creamy. Just like ice cream.

In just five minutes you can have this no-sugar added sweet treat. Eat it on a hot day, or you know, on a snowy April day. Did you know you can also use this ice cream to make a healthy snickers ice cream bar? You should definitely check it out!
