Chocolate and Valentine’s Day. They’re like peanut butter and jelly. Or cute puppies and smiles. Or pizza and ranch {trust on this one}. They just go together.

I mean, doesn’t it seem like all Valentine’s Day desserts revolve around some decadent chocolate treat? Like rich chocolate cake, or chocolate cheesecake.

So in capitalizing on this trend, and well, the fact that chocolate is just plain delicious, I’m showing you how to make Baileys chocolate truffles for Valentine’s Day.

How to Make Baileys Chocolate Truffles

Truffle Secret Ingredient

The best part about making truffles is that they take basically no time at all.

If you’ve ever made Oreo balls, that’s what you should think of when it comes to truffles.

Except, this particularly rich Bailey’s chocolate truffle is going to a whole new level with its ingredients list.

Rather than Oreos in our truffle batter, we’re going to use chocolate pizzelles.

Never heard of a pizzelle before? No worries. They’re like a thin waffle-like cookie that can typically be found in the cookie section of your grocery store. I found these chocolate pizzelles at Aldi’s.

Other Truffle Ingredients

Just like Valentine’s Day and chocolate go together, so do cream cheese and truffles.

It’s important to have either room temperature or softened cream cheese for truffle making so that the batter ends up super smooth and creamy.

To bump up the chocolate flavor cocoa powder is added to the food processor.

For sweetness? Dates!

Yes, dates make the perfect healthy sweetener and add an almost caramelized flavor to the truffles.

Oh, and they wouldn’t be complete without a little bit of Baileys. Even though I’m still not drinking {baby girl will be here soon though!}, Baileys always reminds me of Valentine’s Day. Its creamy and adds just the right richness to these chocolate truffles.

Blend, Roll and Dip

Now for the best part. All the ingredients above get added to a food processor and blended until smooth.

I told you truffles were super easy to make!

All that’s left is to roll the dough into bite-sized balls and dip in some melted chocolate.

It’s best to refrigerate the balls prior to dipping in warm chocolate so that they hold together nicely.

Since these Baileys chocolate truffles are already pretty rich on their own, I didn’t want to completely coat them in even more chocolate. Although, you’re totally welcome to do so if you want ALL the chocolate.

Instead, I opted to half dip the truffles in melted dark chocolate. I also recommend dark chocolate as it provides just the right balance to the sweet truffle.

Give the Gift of Truffles

If you can handle giving away any of these truffles, they make the perfect Valentine’s Day gift. Or really, just a great gift in general for your chocolate lovers.

Baileys chocolate truffles are decadent with a hint of Irish cream. Topped with melted dark chocolate, these truffles are a chocolate lover’s dream!

Ingredients
  • 8 oz cream cheese softened
  • ¼ cup cocoa powder
  • ¼ cup dates roughly chopped
  • 18 dark chocolate pizzelle cookies
  • ¼ cup Baileys
  • ¼ tsp. salt
  • cup dark chocolate chips
  • 2 tsp. coconut oil
Directions
  1. In the bowl of a food processor, add cream cheese, cocoa powder, dates, Baileys and salt.
  2. Blend until completely smooth.
  3. Roll into 26 balls, place on a parchment paper lined cookie sheet, and refrigerate for 10 minutes.
  4. Meanwhile, in a microwave safe bowl, melt chocolate chips and coconut oil together.
  5. Dip the chilled balls halfway into the melted chocolate. Place on the cookie sheet to allow chocolate to harden.
