I’m a big proponent of breakfast. Whether it’s in the morning or evening {brinner anyone?} I think everyone should eat breakfast. It helps rev up your metabolism and keeps you from overeating throughout the day.

“But Danielle, I just don’t have time to make breakfast in the morning.” Everyone says that. I hear it all of the time. That’s why I’m here to save the day…more specifically your morning. And even more specifically with these healthy blueberry and cherry parfaits.

The beauty of these red, white and blue inspired parfaits is that they can be made ahead. Now there’s no excuse that you don’t have time to eat/make breakfast. Just whip up a big batch and top with granola in the morning.

These parfaits honestly couldn’t be simpler. In just 10 minutes you can have two breakfasts for the week. Double the recipe and you have almost your entire week of breakfasts done!

A good parfait starts with yogurt. I prefer plain whole milk Greek yogurt because of its probiotics, healthy fats and filling protein. Then stir in your own honey for sweetness. This way you know exactly what’s going into your yogurt and you can control the sugar.

My favorite part about these blueberry and cherry parfaits? The blended cherries! I love using no sugar added frozen pitted dark sweet cherries.

While summer is the perfect time for fresh cherries I just didn’t have the time. I wanted something fast. Which meant not dealing with pitting cherries myself. Although you could totally buy one of these cherry pitters and let me know how it goes!

Blueberry and cherry parfait is the perfect make ahead healthy breakfast. With just six ingredients, this simple parfait comes together in just 10 minutes. Make ahead for those rushed mornings for a healthy on-the-go treat.

Ingredients
Ingredients:
  • 1 cup frozen pitted dark cherries thawed
  • 1 tsp. vanilla
  • 2 cups plain whole milk Greek yogurt
  • 2 Tbsp. honey
  • 1 cup blueberries
  • ½ cup Blueberry Almond Granola
Directions
Directions:
  1. In a small food processor, add the cherries and vanilla. Blend until smooth.
  2. In a small bowl, stir together the yogurt and honey.
  3. Spoon half of the mixture among two glass jars. Spoon half of the cherry mixture over the top and top with half of the blueberries.
  4. Repeat with the remaining yogurt, cherry mixture and blueberries.
  5. Top with granola and enjoy.*
Recipe Notes

*Note: If making ahead, place your granola in a Ziploc and top your parfait with it in the morning.

*Note: You can also easily double this recipe to make breakfasts for the whole week.
