Blueberry Chex vegan Krispie treats are the same marshmallow treats you know and love, but with a blueberry flare. These Krispie treats are perfect for a Fourth of July party or summer cookout.
Classic rice krispie treats will always have a place in my heart…like a big place. I love the gooey, sweet melted marshmallows, combined with crunchy, airy cereal. Plus summertime seems like the perfect time to whip up a 9″x 13″ pan.
But today, I felt like it was necessary to switch things up. I initially looked high and low for Strawberry Cherrios, but alas, they were not available.
Trying to keep this recipe gluten free, and while standing in the cereal aisle, my eyes passed over this beautiful box of Blueberry Chex. I had never had them before, so thought it was worth a shot.
Wow! These Blueberry Chex were outstanding! It’s a mix of blueberry flavored Chex squares and plain rice Chex. The balance is amazing and I had no problem eating this as dinner one {okay, two, maybe three} nights. To the point where I actually had to buy another box just to make these blueberry Chex vegan Krispie treats.
Simplicity of Blueberry Chex vegan Krispie treats
If you’ve ever made regular rice Krispie treats, then you know this recipe requires just a few simple ingredients. Typically butter, marshmallows and rice Krispies.
Today we’re switching up just two of the ingredients and leaving the marshmallows to their sticky selves. This time we opt for coconut oil {in it’s solid form} and Blueberry Chex cereal.
Melt those mallows
If you’re okay with these blueberry Chex Krispie treats not being vegan, then feel free to use the typical Jet-Puffed marshmallows. But if you do want them to be vegan {which is what this recipe is all about}, then make sure you’re using a marshmallow that’s free from gelatin.
You can find these vegan marshmallows at Trader Joe’s or on Amazon. You can look for a brand called Dandies, or the Trader Joe’s brand.
The only part of cooking involved in this recipe. Melt the coconut oil over medium heat {making sure the pot isn’t too hot will keep the marshmallows from burning}. Then add the marshmallows and stir until completely melted.
Vegan Krispie treats are born
Finally pour that sweet, sticky mixture over a large bowl of Blueberry Chex and stir until the cereal is completely coated.
Make sure to spray your 9″x 13″ pan really well with cooking spray. There’s nothing worse than a Krispie treat that doesn’t want to come out of the pan.
I then like to spray my fingers with cooking spray to press everything evenly into the pan. And vegan Krispie treats are born!
All that’s left is to slice and take to your next outdoor party or Fourth of July gathering. Oh, and watch them disappear in no time!

Chocolate covered strawberry cookies
Red, white and blue cookie dough bites
- 2 Tbsp. coconut oil
- 12 oz bag marshmallows*
- 1 {12.5 oz} box Blueberry Chex Cereal {abt. 7 cups}

In a large saucepan, melt the coconut oil over medium heat.* Add the marshmallows.

Stir until marshmallows are completely melted.

Meanwhile, add the Chex Cereal to a very large bowl. Pour the melted marshmallows over the cereal and stir until cereal is completely coated.

Grease a 9”x 13” pan and pour the cereal mixture into the pan. Spray a spatula {or your fingers} with cooking spray and press the mixture flat into the pan.

Let sit for 10 minutes until solid. Cut into 12 bars and enjoy!
*Note: make sure to look for vegan marshmallows if you plan to make this a vegan recipe. They can be found at Trader Joe’s or online.
*Note: medium heat will help keep the marshmallows from burning.
