Chocolate Covered Strawberry Cookies

Happy {almost} 4th of July sweet treat lovers! I’m going to keep this post short and sweet for all of you since I know you’re likely enjoying time with family and friends and prepping for upcoming festivities. These chocolate covered strawberry cookies are so perfect for the 4th of July, and super easy to whip up as a last minute treat.

Today is my dad’s birthday {lucky for him having a birthday that falls on an actual national holiday!}. Every year for his birthday we go out on the Mississippi river on their boat and watch the fireworks from the water. Which is exactly what we’re about to do today. As I mentioned in this previous post, in our family you always get to choose your birthday dessert. There are many times that my dad will end up choosing something that has chocolate in it which I thought these cookies would be perfect for. Or a layered banana pudding dessert {what he actually picked}.

Birthday desserts usually always fall to me to make and today was no exception. The banana pudding dessert came together super quickly and these cookies come together just about as quickly. The use of strawberry Jell-O helps to make the cookies super red {and festive} and adds a nice sweet strawberry flavor to the cookies. The rest of the cookie base is pretty basic, butter creamed with sugars, eggs, some flour, baking powder and salt. With the exception of the strawberry Jell-O, you may already have all of these ingredients in your pantry.

Then toss in some dark chocolate chips {for the chocolate covered portion} and you have yourself a cookie form of a chocolate covered strawberry! I would definitely suggest sticking with dark chocolate chips because they really help to balance out the sweetness from the Jell-O. To make the cookies 4th of July inspired I melted some white chocolate chips and drizzled it over the cooled cookies. Then top with blue sprinkles and you’re on your way to a festive cook-out.

If you want to make these chocolate covered strawberry cookies for a different occasion, just omit the white chocolate and blue sprinkles. The cookies are just as good without any topping on them.

A 4th of July inspired cookie that tastes just like those special chocolate dipped strawberries

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1/2 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 (.30 oz) packages sugar free Strawberry Jell-O
  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 cup dark chocolate chips

  1. Preheat oven to 350°F and grease two large baking sheets with cooking spray. 

  2. In a large bowl, beat the butter until creamy. Add the sugars and beat until light and fluffy. 

  3. Beat in the eggs, one at a time, mixing well after each addition. Add in the vanilla and Jell-O mix and continue to beat until incorporated. 

  4. Add in the flour, baking powder and salt and continue to beat until smooth. 

  5. Fold in the chocolate chips. 

  6. Spoon the batter onto the prepared baking sheets and bake for 10-12 minutes, remove to a wire rack. 

  7. If you’re making these for the 4th of July, melt 1/4 cup white chocolate chips and mix with 1 tsp. coconut oil. Drizzle over the cooled cookies and top with blue sprinkles.
