I like to call these little kitties my ritzy black cats. Mainly because they’re made with Ritz crackers, but also because they’re so cute. Only three main ingredients are needed to create a black cat that’s perfect for your next Halloween party.

I don’t know about you, but come the end of September when Halloween candy starts to make its debut, I have to physically force myself not to venture into the that aisle at Target. When all of the candy comes in cute mini sizes I don’t feel quite as bad eating so much, even though I know I’ve likely eaten about 3 whole candy bars. Any one else?? ??

In an effort to combat the fun size candy {a.k.a. not so fun size food baby that subsequently shows up} I decided a healthy Halloween treat was necessary. Because my spooky spiders weren’t so healthy, I thought I should create an easy treat that was just as tasty, but better for you. Enter the Halloween black cat.

Start with whole wheat Ritz crackers. They’re still buttery and delicious like a traditional Ritz cracker, but with whole wheat. They’re also the perfect size for creating the black cat face.

Top each cracker with a dollop of natural peanut butter. For those of you who have been reading for a while, you’ll know that when I say natural peanut butter it means that the ingredients list should only contain peanuts and salt.

There are so many brands out there that try to fool you into believing their peanut butter is natural. But you’re smarter than that and {now} know to check the ingredients list for two simple ingredients. ?? Applause to you for knowing better than to be fooled by their trickiness. P.S. Target’s natural peanut butter is one of my favorites. But Smuckers also has a great natural peanut butter I really like.

Top with one more cracker and then freeze. If you had time to refrigerate your peanut butter {hello protein!}, it won’t take so long to freeze. However, if you just opened your peanut butter it requires stirring since the natural oils in peanuts separate. This makes it a bit more difficult for the cracker sandwich to, well, sandwich. So just freeze for a longer period of time, about 20 minutes.

Now for the best part of your Halloween black cats, chocolate! Dark chocolate is full of antioxidants and can help with blood pressure. It also makes for a great base for the black cat face. Dip the PB sandwich in the melted chocolate, pop two candy eyes on there, and either let sit until the chocolate is dried or freeze for faster cat decorating.

The decoration part is pretty simple as well. Using a white icing pen, draw triangles for ears, three lines for whiskers and a small mouth. Dot a little red nose in the center of the whiskers.

Halloween Black Cat Cracker Sandwiches
These Halloween black cat peanut butter sandwiches are the perfect treat for your Halloween party. They’re healthy, only require 3 ingredients and are super easy to make.

Ingredients
Ingredients:
  • 32 Ritz whole wheat crackers
  • 8 Tbsp. natural peanut butter
  • 1 ½ cup dark chocolate
  • 1 tsp. coconut oil
  • 32 candy eyeballs
  • White and Red gel pen
Directions
Directions:
  1. Spread ½ Tbsp. peanut butter among 16 crackers and top with another cracker.
  2. If using natural peanut butter that you haven’t refrigerated, make sure to freeze the cracker sandwiches for 10-20 minutes until the peanut butter is completely set.
  3. In a small bowl melt the dark chocolate and coconut oil in the microwave for 15 seconds at a time, stirring after each time, until chocolate is melted.
  4. Dip the whole sandwich cracker in the melted chocolate and place on a parchment paper lined large cookie sheet.
  5. Press two candy eyeballs in the center of each dipped cracker and allow to dry. For faster drying, place in the freezer for 10 minutes.
  6. Once the chocolate has dried, use the white gel coloring to draw ears and whiskers around the candy eyeballs. Use the red gel pen to dot a nose in the center to look like a cat.
