Monster Cookie Sandwiches

If you loved double doozies as a kid, then you’re going to love these monster cookie sandwiches. Soft, gluten free monster cookies create the perfect sandwich for fluffy cream cheese frosting. All with a healthy spin!

This must be the week of nostalgic treats, because today I’m sharing one of my favorite treats as a kid. The double doozie.

For those of you who are unaware of what a double doozie is, it’s a load of frosting sandwiched between two soft and chewy cookies. The Great American Cookies company was where I first had this delectable, sugar-filled treat.

Typically a mall staple, I would always crave a double doozie every time we were there. Recently, my mom told me that this wonderful institution closed in our hometown mall. It had me reminiscing about this glorious sandwich cookie.

While I absolutely loved that frosting filled cookie, there’s no way I could bring myself to eat an entire one. Thinking about the amount of sugar in one of these cookies makes my head spin.

So what did I do? Recreated it in a healthy way, of course!

I took one of my favorite healthy cookies on the blog: the gluten free monster cookie. Then created the most delightful frosting that was absolutely perfect to sandwich two soft and chewy cookies between.

As I mentioned, we start with the best cookie known to {wo}man. I love the chewiness of a monster cookie, and the fact that there’s no flour required.

Plus when they’re plum full of chocolate chips and M&M’s, I just don’t think you can go wrong!

Typically there’s a lot of additional sugar and butter in monster cookies. Naturally, I had to turn them healthy. I think they’re one of the most popular cookies I’ve ever made. The recipe is asked for continuously.

So, there’s no butter or refined sugar in these cookies, and they remain gluten free with the addition of oats.

Normally, I would just spoon the mixture right on to the baking sheet. But since I wanted to make sure each cookie had a sandwich partner, I used a cookie scoop. You’ll want to smash {lightly…we’re not killing the cookie balls here} them down because they don’t spread.

Isn’t the filling sometimes the best part of a cookie sandwich? I didn’t want to go straight up frosting here. We are, after all, trying to keep these cookies on the healthy side.

So, I opted for some lightened up cream cheese, plain Greek yogurt and sugar free/fat free Jell-O pudding mix.

The pudding mix creates this incredible texture when it’s mixed with the above ingredients. Plus, no powdered sugar involved here.

Just whip it all up in a bowl with your hand mixer {you do have a hand mixer, right??}. Then spread that delectable frosting all over your monster cookie sandwiches.

Gluten free monster cookie sandwiches: the decorating

Since it’s getting closer to Halloween, I thought monster cookies would be perfect for this occasion. You know, because, monsters and Halloween kind of just go together? Okay, glad we’re on the same page.

Candy eyes create the perfect monster face on these monster cookie sandwiches. Just press into a fresh out of the oven cookie and let set while you make your frosting.

I also had some fun green, black and orange sprinkles that I used to decorate the outside of the cookie.

Simply sprinkle a whole bunch of, well, sprinkles, on a plate and gently roll the sandwich cookie in the sprinkles. If you have enough frosting poking out the sides, it should easily pick up the sprinkles. If not, just press the sprinkles into the frosting with your hand.

And there you have it! Monster cookie sandwiches that are perfect for Halloween, or any time you’re feeling nostalgic for a double doozie!

Looking for the perfect gluten free cookie sandwich? Check out this healthy, gluten free monster cookie sandwich that's perfect for Halloween, or any time of year.

Servings: 18 cookie sandwiches
  • 1 batch Healthy Gluten Free Monster Cookies
  • 8 oz low fat cream cheese, softened
  • 1 cup whole milk plain Greek yogurt
  • 1 {1 oz} package sugar-free, fat-free vanilla Jell-O pudding mix
  • 2 Tbsp. Silk unsweetened vanilla almond milk
  • 2 Tbsp. pure maple syrup
  • 1 tsp. vanilla
  • Orange, Green and Black sprinkles
  • Candy Eyeballs
  1. Make cookies according to directions on Healthy Gluten Free Monster Cookies

  2. After the cookies have come out of the oven, press the candy eyeballs into about half of the cookies while they're still warm.

  3. While the cookies bake and cool, in a medium-size bowl, beat the cream cheese until smooth. 

  4. Add the Greek yogurt, and continue to beat until smooth and no lumps. 

  5. Beat in the remaining ingredients until frosting is completely smooth. 

  6. Frost half of the cookies with a hefty two Tbsp. of frosting and top with the remaining half of the cookies. 

  7. If you'd like to roll your cookies in sprinkles, pour sprinkles onto a small plate and roll the cookie in the sprinkles.

  8. If they're not sticking while rolling, just sprinkle onto the cookie by hand. 

  9. Store in an airtight container in the refrigerator. If making ahead, frost cookies just before serving.
