When I was younger, okay, and let’s be honest, even now, I was obsessed with eating raw cookie dough.
My close friends would come over for a sleepover, we would watch movies, typically make up a dance in my parents basement {I was a dancer when I was younger}, and then of course make cookie dough.
We never seemed to want to actually bake it into cookies, so eating it raw was the next best thing.
I honestly can’t remember now if we were smart and knew not to mix in raw eggs, but either way, edible cookie dough was always on our minds.
This no bake cookie dough though is truly edible. It has no eggs, very little flour, and is perfectly protein packed.
I love that this version is healthy, requires few ingredients, and takes just 10 minutes to put together. Making it the perfect sleepover snack. Or, I guess now that I’m older, a perfect afternoon pick-me-up.
How to make no bake cookie dough
5 simple ingredients
The best part about this cookie dough recipe, besides the fact that it’s so easy to make, is that it requires very few ingredients.
I’ve always been a peanut butter cookie fan, so I thought it would be perfect to make a peanut butter no bake cookie dough bites.
Just start with natural peanut butter {only peanuts and salt on the ingredients label}. Add in some vanilla protein powder {or chocoalte if you want chocolate peanut butter cookie dough}. Then some pure maple syrup for sweetness and a little coconut flour to hold everything together.
Mix all of that with a hand mixer, because it becomes a bit tough to do by hand.
All that’s left is so mix in mini chocolate chips, because it obviously wouldn’t be cookie dough without them.
5 minutes to no bake cookie dough
Yes, you read that right. Just 5 minutes of your time until you could be eating healthy, peanut buttery raw cookie dough yourself.
That even includes the time it takes to roll it into little balls.
You could, of course, opt for no rolling, and eat it with a spoon like you would at the aforementioned sleepover. Or even with apple slices, or pretzels for that sweet and salty combo.
No matter which way you decide to enjoy these sweet little nuggets, just get to making them now.
I took some to a book club earlier this month, and they were snatched up in a matter of minutes. I think I came home with three leftover cookie dough bites.
So I would highly suggest making a double batch if you plan on taking these to a party. Or even make a double batch for yourself and store some in the freezer. That way you’ll never run out, and will have a perfect snack for when the cookie dough cravings strike!

Healthy Chocolate Pudding Dirt Cups

- 1 scoop vanilla protein powder
- 2 Tbsp. coconut flour
- 1/2 cup natural peanut butter
- 1/4 cup pure maple syrup
- 1 tsp. butter extract
- 1/8 tsp. salt
- 2 Tbsp. mini semi-sweet chocolate chips*

In a large bowl, mix togehter all ingredients, except chocolate chips, until the mixture becomes thick.

Stir in the chocolate chips.

Roll the mixture into 13 balls, and store in an airtight container in the fridge or on the counter.
*Note: use dairy free chocolate chips for vegan.
Note: make a double batch if you’re taking to a party, or freeze extras for later.
