Oreo pudding brownie is a chewy brownie layered with cheesecake filling and topped with Oreo pudding. An over-the-top brownie everyone is sure to love.
Today is my birthday! And what better way to celebrate than with these Oreo pudding brownies?
I first made this dessert back in February, two weeks after Kennedy was born.
The inspiration came from a few different places.
- Burken had bought this box of Oreo pudding mix on a whim
- My book club was coming over {yes, I’m crazy for having them over two weeks after Kennedy was born}
- I also had a box of brownie mix hiding in the cupboard I wanted to use up
Sometimes dessert ideas just come to me on a whim, and that’s exactly what happened with this Oreo pudding brownies.
I’m fairly sure I was nursing Kennedy at about 1 am, and was trying to come up with a way to use up the Oreo pudding and brownie mix. I also needed something super easy to make for my book club ladies.
Enter the idea for these Oreo pudding brownies. And man, oh man, my brownie brain child did not disappoint.
Let’s break down just how easy it is to make the best chocolate dessert you’re going to have in quite some time.
Oreo Pudding Brownies in 3 easy steps
Step 1: make the brownies
At the time of first making these brownies, Kennedy Jane was just two weeks old.
So you best believe I was not going to be making brownies from scratch. Well, actually, my mom was not going to be making brownies from scratch. She was staying with us that week to help me adjust and heal {read her birth story to find out more about that}.
And while my mom’s Betty Crocker skills are significantly improving, I wasn’t going to ask her to make brownies from scratch.
So all you have to do is follow the directions on the box of brownies and the first step of this three part dessert is done.
Moving on to step #2.
Step 2: Make the cheesecake filling
Oh, did I forget to mention that there’s also a delicious layer of creamy cheesecake in this Oreo pudding brownies dessert?
My bad.
Well, while your brownies cool, it’s the perfect time to make this luscious no-bake cheesecake filling.
See, I’m making it even easier for you with this dessert. No baking after the brownies!
Once the brownies are cool, and they must be cool so as not to melt the filling, spread an even layer of cheesecake filling over the top.
Place that bad boy in the fridge and let chill for about 30 minutes to allow the cheesecake filling to set.
This leads us to our final step of this super easy Oreo pudding brownies dessert.
Step 3: Oreo pudding topping
This is where the Oreo pudding comes into play. And thank goodness pudding literally takes five minutes to make.
Once again, we’re just following box directions here. So cold milk and the pudding mix are all that’s necessary for this step.
Give it five minutes for the pudding to set up and then spread over the top of the cheesecake layer.
If you want to get real fancy {like I did}, crush and sprinkle some Oreos on top of the pudding. I do suggest doing this right before serving though. Otherwise the Oreos get a little soggy. Which, honestly, isn’t terrible, but the crunchy contrast is perfect for the creamy dessert.
Step 4: Eat a big slice
Okay, I know I said there were only three steps to these Oreo pudding brownies, but I couldn’t forget about actually eating the dessert.
Because it’s my birthday, I’m taking the first slice.
I just love how the brownie gets soft and chewy under the cheesecake layer and how the Oreo pudding tastes just like cookies and cream ice cream.

- 1 {18.4 oz} box brownie mix
- ⅔ cup oil
- ¼ cup water
- 2 eggs
- 8 oz cream cheese softened
- ⅔ cup Greek yogurt
- ⅓ cup pure maple syrup
- ½ tsp. vanilla
- 1 {4.2 oz} box Oreo Cookies and Cream Pudding mix
- 2 cups cold milk
- 7-8 Oreo Thins

Preheat oven to 350°F and grease a 9” x 13” pan with baking spray.

In a large bowl, mix together the brownie ingredients until smooth. Pour into the prepared pan in an even layer.

Bake for 28-31 minutes. Remove and let cool completely.

While the brownies are cooling, in a medium-sized bowl, cream the cream cheese until smooth. Add the yogurt, pure maple syrup and vanilla and mix until smooth.

Spread in an even layer over the top of the cooled brownies and place in the refrigerator for 30 minutes to set.

Once the cheesecake layer has set, in a medium-sized mixing bowl, mix together the Oreo pudding ingredients until smooth.

Pour over the top of the cheesecake layer. Place in the refrigerator to cool and set.

Just before serving, crush up the Oreo Thins and sprinkle over the top. Slice and serve.
