Hello sweet treat lovers! Another month down. How was your June? Can you believe we’re less than a week away from the 4th of July already? Yea, I can’t either.
So here’s the month of June recap for you. Read this and then enjoy all of the summer sun and produce!
Piece of Cake: Nourish
I love salads in the summertime. For some reason they’re just so much easier to make {and want to eat} when the produce is so fresh.
My favorite salad is one from Panera that’s only available in the summer. I decided to recreate the strawberry chicken salad with a homemade poppy seed dressing for the latest Spring/Summer meal plan.
I just feel better knowing that everything was made from scratch. Surprisingly dressings are super simple to make on your own, and really quickly. This poppy seed dressing has quickly become one of my favorites. Thinking I may have to make this for dinner tonight!
Piece of Cake: Travel
On Saturday, Burken and I, along with my parents and another couple are going up to Door County for a little extended weekend trip.
I’ve never been to Door County, but hear it’s beautiful. We’re staying in a little cabin/condo that’s right on the water. We’ll be taking my parent’s boat, so lots of sun time heading our way!

Piece of Cake: Celebrate!
The month of June was full of celebrations! From the One Year Anniversary of I Only Came for the Cake to my mom’s birthday, Father’s Day and Burken and my’s three year anniversary.
First, I can’t believe that this blog of mine has already celebrated its first year. With over 80 recipes and posts, I sincerely hope you all have enjoyed reading and following along with my healthy recipes and lifestyle posts!
We always enjoy celebrating family member’s birthdays, and this one was no exception. My mom had so many activities planned for her birthday this year.
If you’re ever looking for a fun game to play, buy some Play-Doh and assign everyone an animal. Then have them make said animal and see what everyone comes up with.
I had an owl, while my brother’s fiance had a unicorn. It was actually a ton of fun to see how creative everyone was!
Last but not least, our three year anniversary. It’s hard to believe that we’re celebrating three years together, but I wouldn’t change it for anything. {Okay, maybe the belching could change, but then would he really be Burken? 😂😂}. This quote below was the end of my dad’s speech at our wedding, and a great toast to remind us how much we still have to look forward to.
Piece of Cake: One Last Slice
What I’ve been loving: this facial highlighter from L’Oreal. I use it every day and helps to give me a nice little summer glow boost. I don’t know how to contour or do any of that crazy stuff, so this highlighter has made things super easy.
What you’ve been loving: as per usual, the 6 Best HIIT Workouts {obviously a must for summer} and the Peach Upside Down Cake {another must for summer}. But new favorite, and maybe most delicious yet, recipe: Gluten Free Rhubarb Cheesecake Bars!
