Piece of Cake 007

Hello sweet treat lovers! Welcome to yet another Piece of Cake post. September just flew by, didn’t it?

This month was a busy one, gearing up for {and hosting} a new group fitness challenge, and making some tasty recipes for all of you. Including putting together a brand new meal plan.

So let’s get on with the fun of this past month, shall we?

Piece of Cake: Fitness Focus

Many of you may know that I recently became a fitness coach through Beachbody. It has seriously been one of the best decisions I ever made!

The fact that I get to meet and help so many women {and men!} through this program is incredible. It really is a business though, and takes time to grow and become better at what I do.

With the holidays coming up, I am hosting a few different groups leading up to each holiday. Halloween Hustle starts on Monday {already!}, so if you’ve been watching along and want to know more, just send me a note here.

Then we’ll have the Hot to Trot group that will end just before Thanksgiving {because we all want a little extra room for pie!}. And finally {at least until the new year} Fab-YULE-us {because we all want to feel fabulous for Christmas and New Year’s}. I spent a portion of September coming up with the perfect groups to get you all excited for the holidays!

On another note for working out, some of you may have seen that I had signed up for a half marathon around the beginning of August. But recently had made the decision to drop out. There were so many other things I wanted to be able to focus my time on, one of them being Beachbody.

The other was getting pregnant. Burken and I have had some difficult times with this, and recently went to see another doctor. While she said I could run the race, if I decided not to, it would likely help our chances of getting pregnant because I wouldn’t be putting so much stress on my body. So for me, it made the most sense to not run this race. In the future I’m sure I will do a half marathon, and I look forward to it!

Piece of Cake: Nourish

These past two months I have been working hard on creating a new meal plan. Man, oh man, is it a good one! I seriously think these are some of the best recipes I’ve come up with so far.

From healthy maple cornbread with lightened up gravy to a balsamic pork and roasted Brussels sprouts, this meal plan has no shortage of fall flavors.

Does this pork have your mouth watering yet??

Piece of Cake: Travel and Celebrate

A week or so ago I went to Charlotte for a work trip. I had never been, and was initially a bit nervous about what we were getting ourselves into because the hurricane was still going on just the week before.

We made it just fine, and the meeting went really well. But Charlotte is such a cute place! The few restaurants we went to were incredible! One was called Rooster’s Wood-fired Kitchen. If you ever have the chance to go to Charlotte, this needs to be on your list!

I had the most incredible gnocchi with duck and roasted vegetables. The gnocchi was soft, and almost melted in your mouth, while the roasted veggies added a slight crunch to the dish. My mouth is watering just thinking about it.

The next night a few of us went to Fahrenheit. If you’re looking for great views of the city, this is a must. It’s a rooftop restaurant that has an amazing wraparound patio. I sat and watched the sunset and had a great moscow mule.

While we only got appetizers, they were some of the best I’ve ever had! Wagyu short rib steamed buns, chorizo stuffed dates {wrapped in bacon!}, and ahi poke nachos {omg were these good}. I definitely want to make a trip back in the near future!

On the note of celebrating, my brother is getting married at the beginning of October. It’s hard to believe that over a year ago he got engaged to the most amazing woman. I can’t wait to celebrate with them and welcome her into our family. I’ll be giving a whole update on that later 😁.

Piece of Cake: One Last Slice

What I’m loving: a few things on my list of what I’m loving this month:

  1. Favorite book: I finally {after like four months} finished the third book in a series called Everything We Give by Kerry Lonsdale. It was incredible, and worth reading the first two, as they all tie together.
  2. New favorite shoes: the perfect flats for fall!
  3. Coziest sweater: I just want to wrap up in this all day long

What you’re loving:

  1. Running tips for beginners: if you’ve been contemplating getting into running, this is the perfect plan for you! I break it all down into simple steps and easy runningapple pie steel cut oats in a bowl with a gold spoon to the right
  2. Apple pie steel cut oats: it’s like Fall rolled up into a tasty and super easy {oh, and healthy} breakfast
  3. Healthy monster cookies: be on the lookout for a new recipe coming soon that will use these cookies…and dang are they good!

Well, that wraps up the month of September! Can’t wait to share all about the wedding and how you’ll be crushing those workouts and nutrition {because I know you’re ready!} next month.
