Pistachio Coconut Energy Balls

Pistachio coconut energy balls are the perfect pre or post workout snack. They’re packed with healthy fats and protein to keep you full and sustain energy before a workout.

Energy balls are one of my favorite snacks to have right after work, when I’m a little bit hungry, but don’t want to ruin my dinner. The fact that they’re super quick to make is also a huge plus.

We don’t currently have kids, but I can imagine having quick snacks on hand are a must. Especially when everyone is trying to get back into the school routine.

So right now, I’m using these pistachio coconut energy balls as a great pre/post workout snack. The other day I was about to start a workout, but I was really hungry. I didn’t want to load up on anything heavy beforehand, and these pistachio coconut energy balls were the perfect snack!

Just one and I was able to feel full, but not too full. I loved the sweet and salty mix and it gave me just enough energy to get through my workout.

Pistachios have so many health benefits, including being high in protein and antioxidants and low in calories. So they make for a perfect snack on their own, but amazing in these energy balls.

Now, if you’re looking to just snack on pistachios, I would definitely suggest getting them in the shell. You’re likely to eat fewer because you have to crack them out of the shell. But for these pistachio coconut energy balls? Spend the extra money to get them out of the shell.

I speak from experience here. I spent waayy too much time cracking those little green gems out of their shell, all because I wanted to save a little. Well money saved, but time not saved.

One food processor, 10 minutes

The best part about pistachio coconut energy balls? They only require one food processor and 10 minutes of your time to make! So not only are these going to make a perfect afternoon snack, but they’ll also be done so quickly, you’ll have the rest of the afternoon to relax.

Just put your pistachios and coconut in a food processor. Blend until they’re a crumbly texture.

Add the rest of your ingredients, like almond butter {healthy fats} and honey {natural sweetness} and blend again until it forms a nice dough.

Now to just roll into balls and you’re done! I did coat mine in a little extra shredded coconut, but feel free to leave off {and less work}.

The combination of the salty pistachios with the sweetness of the honey and the bright coconut flavor is one snack you’re going to constantly want to eat!

Pistachio coconut energy balls are a perfect pre or post workout snack. They're also a great quick after school snack for busy families!

Ingredients
Ingredients:
  • ¾ cup shelled pistachios
  • ¾ cup unsweetened shredded coconut {or coconut flakes}
  • ½ cup almond butter
  • ¼ cup honey
  • 2 Tbsp. coconut flour
  • 1 tsp. vanilla
  • ¼ tsp. salt
Directions
Directions:
  1. In the bowl of a food processor, add the pistachios and coconut. Pulse until the pistachios are broken down and crumbly.
  2. Add the remaining ingredients and blend until a dough forms.
  3. Roll into 16 bite size balls {mine are about 2-3 bites} and store in an airtight container.
  4. If desired, roll in additional shredded coconut.
