S’mores Bars

S’mores bars are made with a gooey chocolate chip cookie base and topped with sweet mini marshmallows and crushed Chips Ahoy! cookies. If you’re looking for the perfect s’mores bar recipe that reminds you of summer, this is it!

Is it truly summer if you don’t have s’mores at least once? It’s kind of like that whole “if a tree falls…” saying. Well rather than the sticky mess of a traditional s’more, I’ve come up with the most delectable cookie bar version.

Between the gooey chocolate chip cookie base {chocolate}, the toasty marshmallow {clearly the marshmallow portion} and the crispy Chips Ahoy! cookies {graham cracker}, you have yourself the perfect s’mores bar.

This s’mores cookie bar has been hanging out in my recipe vault for an entire year. Somehow I always came up with something else to post about, and these s’mores bars were pushed to the back burner.

And because s’mores are quintessentially summer, I couldn’t bring myself to post this recipe in the winter, even though they are truly that good. If you want a reminder of what summer feels like when it’s wintertime, then you should definitely be making these s’mores bars.

But I’m finally gift you all with this recipe. Because honestly, it’s just too good not to share this summer.

S’mores bars cookie base

The base of these s’mores bars took me awhile to get down. I wanted a soft, chewy cookie base, but it still had to stand up to the marshmallows.

With a little finese, {okay, honestly it was more like playing around with the sugar quantities} I came up with the most perfect cookie bar. You could honestly make just the bars and everyone would be happy. But, it’s summer, and we’re talking s’mores. So we’re going over the top with this sweet and chewy cookie bar.

Toasty marshmallows and crunchy cookies

No s’more is complete without the graham crackers and marshmallow. We all know that the marshmallow has to be toasted. I personally always prefer the golden brown version of the mallow, but for those of you who like it a little darker, feel free to leave the pan under the broiler longer.

This is probably the simplest part of the s’mores bars. Once the cookie base is mostly baked, pull it out and top with mini marshmallows. I would definitely stick with the mini because you can get all of the Chips Ahoy! cookie pieces in between the mallows and they melt and become all ooey-gooey. {mouth watering yet??}

Campfire s’mores bars

These bars would be perfect to bake up the night before camping and take as a treat. But, if you’re not one for camping {like me}, then enjoy a s’mores bar in the comfort of your own home and pretend you’re out by a campfire.

S’mores bars will go fast, so you may consider making a double batch. They’re just that good!

These are the best s’mores cookie bars you will ever have. Chewy chocolate chip cookie bar topped with toasty marshmallow and crunchy graham cracker cookies. These easy s’more bars will go super-fast.

Ingredients
Ingredients:
  • 1 cup {2 sticks} butter softened
  • 1 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ¾ cup mini chocolate chips
  • 1 ½ cups mini marshmallows
  • ¾ cup mini Chips Ahoy! cookies crushed
Directions
Directions:
  1. Preheat oven to 350°F and grease a 9”x 9” pan with cooking spray.
  2. In a large bowl, cream the butter. Add the sugars and continue to beat until light and fluffy.
  3. Add the eggs, one at a time, mixing each time to fully incorporate. Stir in the vanilla.
  4. In a large bowl, whisk together the flour, baking powder and salt. Mix in half of the dry ingredients into the wet ingredients until combined.
  5. Add the remaining flour and beat until incorporated.
  6. Fold in the chocolate chips.
  7. Press the batter into the prepared pan and bake for 25-28 minutes, until cookie bars are lightly browned around the edges.
  8. Remove from the oven and sprinkle the marshmallows and crushed cookies over the top.
  9. Continue baking for an additional 10-12 minutes, until marshmallows are golden brown.
  10. Switch oven to broil and move the pan to the top rack under the broiler. Broil for 1 minute {or less if your broiler is really hot} to get the marshmallows extra toasty.
  11. Let cool for about 10 minutes, then slice.
