Super soft pudding cookies are all in the name. They’re likely the softest cookie you may ever eat. Keep this recipe on hand for any time you need a go-to, simple homemade cookie recipe.
I think I may have mentioned in the past that Burken isn’t huge on sweets, which totally sucks for me since I’m constantly baking around the house. The one exception to his sweet tooth?
These super soft pudding cookies. If I make a batch of them, they don’t go to work, and they’re gone within a couple of days. That’s how much he loves these cookies.
This recipe actually came from my mother-in-law.
For our first Valentine’s Day together I wanted to make him a sweet treat he would really love. He couldn’t stop talking about how he used to make these cookies all of the time when he was younger and that they were his absolute favorite.
Obviously I had to make these super soft pudding cookies.
When I asked for the recipe, I told him I wanted to make these cookies for a friend’s birthday. Little did he know I was whipping up a batch for him.
The only problem? They ended up being rock hard. I have no idea what went wrong, but I’m not one to give up on a good cookie recipe.
Each time I make these pudding cookies, now, they’re so soft and extremely delicious. I promise you won’t be able to stop at just one.
At one point in time I actually had this recipe memorized because I was making them so much. They’re just that good!
Super soft pudding cookies
As you may have guessed by the name, there’s pudding in these cookies. Something about Jell-O pudding mix makes these cookies extremely soft.
The rest of the recipe is like your basic cookie recipe. Butter, sugar, egg, flour. Then the magic happens with the pudding.
I typically only use vanilla pudding mix, but have tried chocolate pudding as well. The vanilla seems to be the best every time.
I’ve also done either chocolate chips or M&M’s, and I have to say, the M&M’s are definitely the winner in these cookies.
Plus with M&M’s you can use whichever color you like for any holiday. I used the Easter M&M’s this time in preparation for the upcoming holiday.
Baked to perfection
These super soft pudding cookies only take 10 minutes to bake. When you open the oven after 10 minutes, you may think they’re not done, but trust me, they are. Maybe that was my problem the first time I made these cookies. I didn’t think they were done so I added a few extra minutes. Definite mistake there!
Take them out after those 10 minutes and move the pan to a wire rack to cool. You’re then left with the softest cookie you may ever eat. I even bet you’ll come to memorize this recipe because it’s just that good.
- 1 cup {2 sticks} butter, softened
- ¼ cup granulated sugar
- ¾ cup packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 {3 oz} package Jell-O instant vanilla pudding
- 2 ¼ cup flour
- 1 tsp. baking soda
- 1/8 tsp. salt
- 12 oz M&M candies
-
Preheat oven to 350°F.
-
In a large bowl, beat the butter until creamy. Add the sugars and beat until light and fluffy.
-
Beat in the eggs, one at a time, mixing well after each addition. Add in the vanilla and pudding mix and continue to beat until incorporated.
-
Add in the flour, baking soda and salt and continue to beat until smooth.
-
Add the M&Ms and beat on low speed until combined.
-
Grease two baking sheets and spoon the mixture onto the prepared sheets.
-
Bake for 10 minutes and remove, allowing the cookies to cool for 2-3 minutes. The cookies will look underdone, but trust me that they’ll be cooked all the way.
-
Repeat with remaining batter.
